Food as Medicine Dinner Series

5 Course to Explore Food as Medicine

  • Ceremonial Cacao

Opening the dinner is Guatemalan Cacao. Served with guided breathwork to invite guests to land in their bodies, and join the table.

This unprocessed cacao was used to inspire discussion on ultra processed foods, are they the cigarettes of our generation?

  • Microgreen Salad

Assorted Microgreens cut fresh from Radical Shoots. A detailed instruction of the nutrients of each green and their health benefits provide by James Valencia, CEO Radical Shoots.

Conversational pairing, just as each green has a unique flavor, and health benefit, everyone has their own unique needs. How does food as medicine intersect personalized medicine, and personal nutrition?

  • Chicken Consommé

This refined broth packes roasted carrot and beet gels. Each bite is unique and intensly flavorful.

Discussion around our food culture, will traditions survive the rise of commoditized food and ozempic?

  • Cloud Gnocchi in Herb Cream, NY Strip

Rich steak and Gnocchi balanced with fresh harvested young carrot and carrot top chimmichuri.

Inspiring conversation around the ethics and cost of food as medicine. If insurance pays for the symptoms of a unhealthy food infrastructure, why aren’t balanced preventative meals covered?

  • Beet Brownie, Tangarine Flower
    Cantaloupe & Marscapone Cream

A dessert in balance, as sweet as it is grounded. Leveraging the bright vital flavors of fresh picked greens and flowers to accent the dish.

Inviting optimism, what do we want food to be? If we approach it with intention and strategy what can we create?
